Banana bread is a super easy go-to treat/cake/lunch box filler option to have on hand. I love this recipe because it’s minimal mess and takes only a few minutes to throw together in the blender. This recipe might come close to one of the most popular paleo banana bread recipes on the internet. It’s creator George Bryant, Civilised Caveman, has a lot of awesome content. Ingredients:
4 bananas (I usually get a whole bunch of 6 and save 2 for the topping)
4 eggs
1/2 cup almond butter
4 tablespoons butter, melted
1/4 cup coconut flour (caution with measuring and coconut flour is very dry and will make a dry bread)
1/4 cup almond flour
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
pinch of salt
Instructions:
Preheat your oven to 180 degrees C
Combine your bananas, eggs, and nut butter, and grass-fed butter in a blender, food processor, or mixing bowl and mix well (if using a mixing bowl you need to mash the bananas beforehand)
Once all of your ingredients are blended, add in your coconut flour, cinnamon, baking soda, baking powder, vanilla, and sea salt and mix well
Pour your batter in a lined pan and spread it evenly (you can use a loaf pan as well, just grease it well)
Top with sliced bananas (and sprinkle with coconut sugar and nuts if you’re feeling adventurous)
Place in your preheated oven and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean
Remove from oven and flip your bread out onto a cooling rack
Slice and serve. Best sliced cold, toasted, and buttered.
